Planning for Jan instead of Dec - Any advice?

After coordinating family schedules, it looks like our intended trip in the first two weeks of December is going to change into January (anytime after the first week). We've been to Disney Springs several times in January and always had a great time, but this will be our first time doing parks in January.
Three adults who like to look and take snapshots. We've got one-day hopper passes. Current plan is to park at HS, go over to EPCOT and stay 'til late afternoon or early evening (roughly, 5 o'clock) in World Showcase. Then, we're going to head over to HS for a few hours to walk the California street and into Galaxy's Edge to look around and Build a Droid at Droid Depot.

Does anyone have advice or tips for this schedule in January? Is there anything going on at either of these parks that we would want to steer clear of (crowd wise or anything)?
We're not planning on riding any rides. We're wanting to go through World Showcase, looking, shopping and having our Kidcot passports stamped. (Yep, we're grown now, but I still have mine from when I was fourteen, and it only has three stamps in it. Gotta fill it!)

If you aren't planning on riding any rides, you don't have anything to worry about, IMHO. If you go mid- to late January, Festival of the Arts may be going on in Epcot, but it doesn't get terribly crowded - if you like taking pictures, you might like it as they have a lot of photo ops during the Festival. One thing to be prepared for is possible very cold temps. We went mid-January last year and it was really cold - upper 40's/low 50's. I would check the weather before leaving and make sure to pack layers - possibly even winter jackets, gloves, hats, etc.

Thanks! That's good to know about the rides. We really don't want to ride any, since some of the sight-seeing is top of the list, as well as building a droid.

The best Disney Day we ever had was actually a crazy day at Disney Springs when the high was 51'F with wind. We all had thick sweatshirts on and long pants, but it was great. We'll be sure to pack accordingly. Great advice!

Thanks! Will definitely do that, because you're right! We've watched walkthroughs of the parks on those times, and it's crowded. Good thought.
The only runDisney race in January is the Marathon, which is the weekend before MLK weekend. The Princess half-marathon is in February, the weekend after Presidents Day. Here's the schedule for the rest of 2023 and the beginning of 2024: https://www.rundisney.com/events/
