I see you're still 10 months away from your vacation, so you haven't made ADRs yet. If you know what restaurants you want to book, you can find menus and prices online (I usually use AllEars.net) and estimate your dining tips that way. A rough estimate for a family of 4 would be $15 tip on a character breakfast, $18-20 on a TS lunch, $25 on a TS dinner. That'll get you in the ballpark, anyway. Other tips you might incur: bellhops ($1/bag), airport baggage handler ($1/bag), "mousekeeping" ($1/person/day, optional). Other park budget items would be extra snacks (avg $4 each), maybe an extra CS meal (avg $10/adult, $7/child). For souvenirs, I would recommend you budget a certain amount per person to spend as they like; my kids usually have around $30-50 to spend, plus I'll usually buy them each one item no more than $20. I might spend $50 on myself and my husband less than that.
For 7 days in the parks for 3 people, I'd guesstimate somewhere around $50-75/day in "extra" expenses.
Can't help you on the cruise tips, though. Haven't been on one in a long long time, but I do remember that we were given "typical" amounts we were supposed to tip per person to each of our attendants: waiter, maid, steward, etc.
