Planning days off from parks

I'm trying to plan what days we'll skip the parks. We're going for 12 days and have 10 days of tickets. We are arriving on Monday night, May 1 and leaving Sunday, May 14. We definitely want Sunday, May 7 off. There is a church we want to visit that day. Do you think we should take Saturday, May 6 off (so that would be two days off in a row) or wait until Wednesday, May 10 to have the second day off. I originally thought the Wednesday of the second week to break things up a little more but now I'm thinking maybe the Saturday might be better because it's a weekend day. Are weekends more crowded? If we go to the part on Saturday, May 6, I was thinking Magic Kingdom that day. On our day off (the Saturday or Wednesday), we were thinking of going to Kennedy Space Station. That might be more crowded on a Saturday too. What would you do?
 
We like to take days off in between our park day. We consider the water parks a "day off" because we rent an umbrella spot and just hang out and relax, I've even napped under the umbrella. But we also try to alternate park days with things like Disney Springs, or a resort hopping day because then we don't have two days in a row or crazy running all over the parks.

I probably would not schedule 2 off days off in a row. We find we need a rest day after every 3 days or so in the parks. If you take off the 5th & 6th then you're going from the 7th-13th with no break, which would be too much for our family.

We'd probably take rest day 1 on the 5th, then rest day 2 on the 9th. That way we'd doing 3 on/1 off/3 on/1 off 3 on. But if you're definitely taking the 6th off I'd look at my 2nd day being somewhere around the 10th. Then you're fresher for the last 2 days in the parks.
