Planning a November trip

Help! I am trying to plan our trip in November (3-8). Can anyone tell me when the park hours and the EMH are published. I would like to be prepared with that info in order to make my ADR's. I know I still have some time before I can make them but a couple of my choices hinge on those times.
Also, can someone explain to me how the EMH work. I know selected parks open 1 hour early, but how do the the evening hours work. Is it always 3 hours and is it only selected attractions that are open or the whole park?
