I've found a few posts talking about what rides are busy and such but not much that lists a strategy of sorts. I'll have 3 days (maybe 4) to spend in the two parks with WWOHP being the key reason for going.

What 5-10 rides/shows at each park are must do's and what order would you do them in to get the most out of your days?
 
I think you said you are going in May. If so, there isn't any real reason to plan. Do WWoHP first thing in the morning and then just do whatever else suits your fancy.

I did say May in a previous post, good memory! I'll likely be at the parks the 4th, 5th and 9th.

The Express Pass prices for those dates is the second lowest available so I'd assume that means crowds won't be too bad but in reading the WWOHP Crowds thread it still seems that virtually any/every day is pretty busy all over the parks. Is that because we're close to Easter and Spring Breaks? Is it safe to assume the crowds will have died down a little by the first week of May?

The crowds will slow down some between Easter and Memorial Day weekend so you're going at a good time.
