If you are okay with leaving the park, not seeing the projections, and barely hearing the music (aka really just seeing the fireworks) I like watching from the Polynesian resort. There is the "main" beach by the volcano pool which I think is reserved for resort guests, but there is a usually pretty quiet beach near the Spirit of Aloha show building on the other side of the marina. Last time I was there, there were a few lounge chairs set up, and while there were a few people watching it was far less crowded than Main Street. You can easily pick up dinner or some snacks from Capt Cooks and picnic on the beach while watching the show. Like I mentioned, the music isn't pumped in but you can sometimes hear it echo across the lake. And as an added bonus, it looks really cool to see the fireworks reflected in the water. It's been a few years and in the past this area was open to everyone, so please correct me if this is no longer an option.
