Place to sit watch parade and fireworks

I'm not sure there is such a place to sit and see well. My thought for an obstructed view is outside Casey's Corner but you will need to be there likely 90 mins plus to secure a seat and people will be standing between you and the parade/fireworks.

You would need a seat around the edge of their seating as each table has an umbrella which will block views looking up.

Most seats along the parade route are several feet back (so you run the risk of people standing in front)
 

After 12+ hours of walking around the park, what's another hour or two of standing?

I would be 100% certain what your MIL can do before the trip to keep it manageable for her. You want to plan in advance to avoid any stressful decisions made during the visit.
 
Go and rent a wheelchair later for those evening hours so she has a place to sit. I have done that in the past when I could still walk pretty well during the day with a cane (hadn’t starting using a rollator yet) but needed a place to sit while waiting for fireworks.
 
If you will want/need a place to sit, bring your own in the form of a mobility device. That seems to be WDW’s position on the matter. There are some random places to sit around the parks but you are 1 of hundreds hoping to find that seat empty when you want it.
 
Depends a bit on which Disney hotel you are staying at. We were staying at the Contemporary during our last visit and for the nightly fireworks, there is an outdoor area with seating at the far end of the 4th floor (same floor as Chef Mickey's but opposite side of the floor). Great place to sit and watch the fireworks and you can also avoid the crowds/lines exiting MK once it is over.

My impression from watching various parades is that regardless of where you stand/sit there is always the chance others will try to squeeze in front of you to get a better view. I can recall watching one of the MK parades from that elevated train station near the front entrance a number of years ago. Not sure if still there or what sort of seating might be available. Being on the 2nd floor made parade viewing easier.
