I'm making a pumpkin cheesecake and I think my mom is making a pecan pie.
 
Only sweet potato, it's a tradition for us.

We're actually going to a restaurant but I'm still making the pies for the family... it's not Thanksgiving without them! :lovestruc

I'm making 12 of the apple (but freezing half unbaked), and 6 each of the chocolate and lemon ones.

Here is a link that explains how to make the apple pies in muffin tins, but you can do it with any filling.

When I make pies that aren't baked I fill the muffin cups part way with dried beans to help prevent the pie crust from shrinking.
When I freeze them I put a muffin liner in first, then make the pies as usual (but not bake them) and stick the pan in the freezer until they're firm. Just pop them out and put into a freezer bag or container. Cute little mini pies ready to go!
You can also make pies in little mason jars, line the jar with crust, fill, top, put a lid on and stick it in the freezer. Once they thaw a bit (otherwise the glass will explode) you can bake them right in the jar! Great for if your taking a meal to someone or going on a picnic!

I'm not really using a recipe for the salted caramel pies. I'm using this recipe for the salted caramel.

Then I'm going to make ganache (which is just chocolate and whipping cream cooked in a double boiler, I sometimes even just use chocolate chips). I'm going to whip the ganache once its cooled and fold in a bit of whipped cream , fill the baked pie crusts part way with it, top with a layer of salted caramel, chill them in the fridge, and then top with a swirl of whipped cream.

I made something similar for a tea party my daughters school had only I used mini muffin tins instead of standard size. They were a hit!

. I'm thinking that you do not freeze these -- just the baked crust. Wasn't sure about freezing a pudding-type filling.

Right, I only freeze fruit pies.
 
A question for you pie experts...Does sweet potato pie taste anything like pumpkin pie?

We will definitely be having pumpkin pie and I've always wanted to try sweet potato pie, but I'm concerned that it will taste a lot like pumpkin. In my mind, there's no need to make two pies that are very similar.

I think they taste pretty similar, but the only sweet potato pies I've ever had were prepared in the same way as pumpkin (same spices).

Pumpkin (had to buy 2) and blueberry. I think I might make a Cheese Pie for dd#1 who loves it as well.

I figured they were probably similar. I guess I'll stick to pumpkin, apple and cherry. Then I can make a sweet potato one at another time.
 
Does anyone have a good recipe for a pumpkin pie with a nut crust??? I had one two years ago and now I can't find it. Nothing I have found online seems the same. I know I did not have to use a food processor for it and it was a crumbly crust that you pressed into the deep pie dish.
