Does anyone know if you can customize the food at the parks? For a specific example, at Woody's Lunch Box, can you get the BBQ Melt without pickles? I know I would have to walk up and order (as opposed to mobile order), but just want to make sure it can be done.

This is one of those cases that you would have to ask at the actual restaurant. Some things they have pre-made so they can not customize. I imagine something like them picking off the pickle would be easy but you still might have some pickle taste if the sandwich was put together in another location and just brought in to be grilled there.
 
Yeah - it really depends on the item, what you want customized and how its prepared.
 
The TS restaurants will be much more able to work with requests. Many of the QS locations receive the food at least partially prepared (i.e. chicken already breaded, sauce already included, etc.) and just needs cooking/warming to serve it.
 

Sometimes there are options to customize in mobile ordering, but usually that's asking for no sauce or a replacement side. Not sure about actual ingredients in the meal, though, except for places like Satuli Canteen where they build the bowl.
 
I tried to mobile order that sandwich and it doesn’t let you customize it by removing the pickle. I would probably order something else and use the mobile ordering . Woodys lunch box was one of the locations that didn’t let you order at the register when we were there in June . People were so mad it was crazy . The grilled cheese and tomato soup were my kids favorite . The tatchos are yummy too . Enjoy !
 
If the cast members are just going to pluck the pickle off, then it's just as easy for you to do so at that point.

So that wasn't the question. Obviously it can be picked off. I wanted to know if it could be made without it to begin with. Given that it's probably premade (based on the other answers), it seems like "no".

I know that was not your question, that is why I answered it like I did the first time. But it morphed into it being more likely that the item that you wanted was pre-made, hence my second post. No need to be offended.

In general, allergies and intolerances are a big deal at the parks and will be taken into consideration.
rhat being said, Quick service might be harderfor picky eaters than a table service.
My grandmother does not eat Mexican food due to a plethora of reasons, but we were eating at la hacienda. She asked if she could get the kids chicken fingers with mashed potatoes and green beans. She hasn’t stopped talking about how good those string beans were since,
They will definitely accommodate at table service, but be prepared for quick service. If you are picky, do what we did at a couple of places due to some pickiness. Ask where the non mobile order ordering line is and go there and order. You can ask for stuff taken out, double check allergies and place the order. It takes a little longer, but it works.
 
To follow up since I'm the OP...they were more than happy to make the sandwich without pickles. I placed a mobile order, then just went and found someone working there and asked if they could make it without pickles. They asked for me order number, spoke a few words into a headset, and voila, pickle-less sandwich. It did take a few extra minutes since it was made from scratch, but they gave me some free tarts since I had to wait.

I didn't check other quick service places, but I suspect they will all do this.
