If you had to choose a DVC hotel based solely on the pool, food availability at the pool for lunch and restaurant choices for an evening meal, where would you stay? Two adults have a one-night trip in the works, no parks.

Saratoga Springs for me. If I'm not doing parks, I'd want to have Disney Springs walking distance from me for the dozens of restaurants, bars, music, and entertainment. 3 different pool areas to choose, two with food, one with full bar. On-site restaurant is decent as is the quick serve, but with Disney Springs right across the bridge, you have all the food choices you could ever need.

I would probably pick one of the monorail resorts. Plenty of restaurants and between the boats and monorail, very easy and enjoyable to get around. GF has a couple really nice pools and pool bars ss well.

On the count of a Disney resort sans parks, I would go for Old Key West largely due to its proximity to Disney Springs via Sassagoula River Cruise (or if too rainy Disney Transport buses). Old Key West also has a nice big pool too in the main area near Olivia’s, Good’s and The Gurgling Suitcase. Overall a pleasant ambience.

Polynesian! Love their pool, you can do Kona to go or the monorail restaurants and the Oasis pool bar is better than a lot of pool bar food I think, and fireworks for night entertainment without going into the parks
Although there is a small section of DVC-targeted accommodations, Polynesian is technically not a full on DVC resort.
