Personal Menu HELP

I am going to make ADR's for my daughter and SIL for Sept. It will be for their 5th wedding anniversary. I know you can have a diver and sign and I can order the cake and have personal menus. But how do you do all this. When I called dinning, they said they don't do that! HELP My ADR day is March 26, so I want to be ready. Should I just make the ressie and let them know it is their Anniv., then do the rest closer to the date in Sept, or should I get it all in writing when I make the ressie. Thanks in advance.
