Does anyone know if it gets busy for breakfast on the weekends? Would there typically be a wait for a table for 4 say around 9am on a weekend?

would say yes - it will be busy - we tried it once really early and it was not too bad - it has a bunch of CM using it
tried it again at I think 9:30 am - and it was way to busy.

would go to the one on US 192 - it is generally walk in and be seated.

where are you staying?

We're considering a adding a couple of nights at a DTD hotel to extend our trip. So we'd be close to the one on 535.

yea - walking distance almost. although windsor hills is closer to the one on US 192

guess go and see - if the parking lot is full - either be prepared to wait or go somewhere else
