I was wondering if you can add your tip and pay for it with a gift card?

Yes you can. I purchased a coupe of Disney gift cards from Target before my trip and used them to pay for tips at all of the table service meals.

On a side note the only place i came across in WDW that wouldn't accept the Disney gift card was Pick A Pearl in DTD. They are not owned or run by Dishey. I'm sure there are more but that was the only place I encountered.
