Our final payment date is fast approaching and due to some unforeseen circumstances we are going to be slightly short of the balance, has anyone had experience of asking Disney to pay the bulk and have an extra week to pay the extra bit?

Call them and ask. I'm sure that they're better equipped to advise you as to what their current policy is regarding late final payments. In the past, there has been a short grace period for those who did not pay on time but it was never a formal policy. It could be rescinded at any time without warning.

How about dropping some of the days on your tickets? Or eliminating hopping? WPF&M? or even removing the dining plan if you've got any of those in your package? You can add any of those back when you have the rest of the money a week or two later. All but the dining plan can even be added once you arrive at Disney.
