Paying Cruise off early?

My cruise isn't until February 2016. My balance due is not until November. If I pay my balance off now, can I book my excursions now? Or do I need to wait until a certain date? Also, when I book my excursions, do I pay for it now?

You do not get to book your excursions early. The date you can start booking is under My cruise activities on your reservation page online. It is based on your castaway status (how many times you have sailed with disney cruise line)
You pay for excursions on your bill at the end of the cruise

First time cruisers can't book excursions until 75 days before the cruise, the same day as the PIF deadline. Returning cruisers can book excursions earlier based upon their Castaway Club level, i.e. how many prior DCL cruises they've sailed.

Currently, you can pay in full anytime, but cannot book anything (excursions, adult dining, etc) until your booking window opens. If you go online to check into your reservation to pay, you'll see the exact date you can start booking. Varies depending on how many times you've cruised with them before.

You are not charged for anything you book online, such as excursions, until the activity happens. So your onboard account will be charged during your cruise as things happen. After applying your onboard credit, if any, and other things such as prepayments (for example, some people prepay gratuities), Disney gift cards you take to guest services, or cash payments you take to guest services...your onboard account will be billed to your credit card at the end of the cruise.

You can see the excursions at any time (whether you've booked a cruise or not). You can't see the specific excursions (times) until your booking window opens.

If it is ask on ship also keep checking online people book then cancel. There should be some slots it runs all day.

The other way around: you must be PIF to be able to book port adventures, Palo/Remy, Nursery, Spa, etc... online. Even if your booking window opens before the PIF date of the cruise.
