Does anyone know if we can pay the adult price for the DDP for a child under 10? We've got a child who won't be keen on the kids meals, but would love the adult entrees and wondered if this might be an option.

It goes by age.
If you want the adult DDP, you will have to pay for an adult park ticket. That is a huge difference between child & adult for the ticket. You may be better off just paying for the meals he wants OOP.

I have a DGD that will almost be 10 for our next trip. There will be some meals she will want the kids menu. LeCellier and Tutto Italia, to name two. If there is an entree she wants off the adult menu....it's much cheaper to pay OOP, as opposed to an extra $50 per day plus the expense of the adult park ticket.
