Well, do you cosider the Main Street Cinema and Exhibition Hall attractions? If so, you can see Mickey (the mouse) cartoons there.

Youcan also see some mice in the Share a Dream Come True parade, as well as SpectroMagic. You can aslo see a couple in Cinderella's Surprise Celebration and Mickey's Jammin Jungle Parade... (sorry, just saw your Edited post about the parades)

Mickey is featured in DisneyQuest and in World of Disney (though I guess that is more of a store than an attraction). At MGM, One Man's Dream features Mickey a few times. The Great Movie Ride also features Mickey in Fantasia. The hub at MK has Mickey.. The other hub has Minnie next to Roy.
