Not sure, but if you mean using 2 days off a multi-day ticket I doubt it.
If you mean buying 2 separate tickets I bet you can, but that'd be pretty dumb as adding the park-to-park option is cheaper than another whole ticket.
Actually good question that I hoped gets answered. The scenario I can see is if you have 3 days max to stay but the buy 3 get 2 gives you 2 days you are never going to use. and it's a 1 park per day ticket you could still do both parks 2 days and 1 park the remaining day. Also if you can I would wonder if you have active tickets for both parks can you ride hogwarts express.

This does not work. You can’t use 2 days from one 5 day ticket to get into two parks in the same day unless it’s a park to park ticket. They don’t allow that.
I think what @CAPSLOCK is saying is that you could buy two 1 day park tickets and use them one in each park on the same day. But there’s no benefit to that because it costs more.
