Park tickets

We have a trip planned for 7 nights and 7 park days.

I’ve been debating adding one more park day.

would I have to do this ahead of time to keep it part of the package? Or would they let me add on a day once my trip has began?

You can add a day to any or all of the tickets once you have checked in. The only issue will be: are there Park Reservations available for the Park you want on that eighth day? Depending on when you're going, that could be a problem. Adding the eighth day before you get there will allow you to make Park Reservations earlier.

The cost to upgrade the tickets will be the same, regardless of when you do it.
