Can a single adult take two children on park rides--provided those children meet the height requirement?

Depends on the ride..Haunted Mansion, POTC are a yes...Rockin' Rollercoaster and EE are a No. Space mtn is a definite no since it's single seating only and I would think that Splash Mtn and Btmrr would also be a no as well as TSM which is set up for only two per car.
 
To clarify - if a child is 7 or over (I believe its 7 it may be 8) they can ride in a car by themselves. In that case all the rides would be available to your party of 3 provided the older child was ok sitting by themselves.

Often see a parent and two kids on Big Thunder. But a no for Seven Dwarfs Mine Train, there is a partition, only two to a seat.
