What are the chances of getting park reservations a day or two before for Animal Kingdom? I currently have 1 day at AK and 2 days at the other parks with 3 at DHS. I'm thinking maybe I do AK one morning that I'm doing Epcot and then hop to epcot for 2pm. Will it be easy to do if we decide to do that?

It depends what your days are. If you’re talking 10/1 or Christmas Day, no you won’t be able to. A random Tuesday in March, yeah, no problem.
 
I'd make park reservations as far ahead as possible and then try to change them if you want later.

If you look at the "theme park tickets" calendar right now, you'll see that all four parks are available tomorrow and every other day from now until October 1. However, as we get close to the Spring Break and Easter periods, that could well change. As skeeter31 said, it's a question of how busy the parks are at the time you're going.
 

Honestly I would change one of your DHS days to AK and not take a chance of waiting. There is no guarantee you will be able to hop to Epcot it depends on availability.
 
I can't speak to hopping but we had no problem switching around days in November. As the week went on I added HS days in the hopes of getting RotR and then switched them to other parks when I didn't.

Why not wait? Just keep looking at the crowd calendar and if one of the days AK disappears then switch otherwise don't worry.

In addition Epcot already has 110% of average crowd attendance as it's capacity so unless you are going during a prime week you likely won't have issues hopping. You just need to keep checking in here to see if that changes around Easter and such.
 
Also, the calendar sometimes says a day is not available when it actually is. So if you want a certain park on a certain day, try to book it anyway because sometimes it'll work. (Worst case, it says not available when you try, right?)
