If we would purchase 7-day passes (without the No Expiration add-on) and wound up having a day or two left, does anyone know if the No Expiration add-on could then be purchased later on the days remaining? I'm assuming not...but thought I'd ask.
The only caveat is that you would need to purchase the non-expiration option for SEVEN days in your example. You need to pay the price for the original number of days on the ticket.
Actually, the non-expiration option works on a sliding scale based on the number of days of your ticket. For 7 days, the non-expiration would be $65 plus tax.

Yes you can add the no expiration option as long as you do it before the ticket expires, ie 14 days of first use. and NO, it can't be purchased just for the days remaining. The price is calculated on the length of the original ticket regardless of the number of days left. To add the feature to a 7day adult ticket would be $69.23, dosen't matter if there are 6 days left or 2.
