Do the parks open all at once or in stages? We are going in May, we were there in 2004 and seem to remember certain parts of certain parks opening later then others.

"Regular Hours" dates:
Epcot: Future World (and Norway) at 9AM. World Showcase at 11AM.
MK: Main Street opens at 8AM. The park attractions open at 9AM. Tom Sawyer Island, later.
DAK: Pandora might open up to an hour before the stated opening time.
DHS: Most areas open at or near 9AM.

45 minutes- 1 hour I've read here on the DIS.

When should people be at the gate to get a decent spot in the headliner lines?

Depends on the park. Maybe an hour for Epcot and MK, closer to 90 minutes for AK and HS. Earlier if it’s a busy time.
