Park hopping unrealistic for staying off-site?

You can definitely park hop from there with cars. It's much easier to hop with a car anyhow (even EPCOT to MK). Keep flexible, though, if everyone needs a break then skip the second park. We plan to do our "Must do's" in the mornings so we don't miss anything if we decide to just pool it the rest of the day.
 
We stayed onsite in 2010, but drove to Orlando, so we had our own car. We still chose to drive to the parks instead of taking a bus. One day we did take a bus and found it was not quite as convenient. We stayed offsite in 2013 and found hopping to be easy.
 
We are staying at Windsor Hills
Ive stayed at Windsor Hills a couple of times. It's close enough to where you can use Uber or a cab service to make 9 people happy transportation wise. Shouldn't cost too much. We do not stay off property anymore though, because when you have 6 adults of all different ages and energy levels, it's easier having the Disney transportation to make sure everyone is happy. One of our upcoming trips I have decided to rent DVC points to stay in a SSR villa.
 
i think it isn't unrealistic at all- you'll just have a tough time getting your group of 9 around :jumping1:
since you have a car it will be definitely doable.
to be honest, you might even be faster than disney transportation
