I keep reading about this in posts, have no idea what is meant.

Also, on the free dining that I missed out on, is that unlimited free dining at any table service restaurant at the parks and resorts?

Signature Dining, is Disney's version of better dining. For lack of a better description, it is their white table cloth locations. Signature dining includes restuarants like Victoria&Alberts; California Grill; Citricos; Narcossees; Artist Point; Yachtsman Steakhose.

Free dining was offered to those that purchase and paid rack rate for a room during a certain period. It is NOT unlimited dining. You get the basic dining plan of one (1) table service(TS), one (1) counter service(CS), and one (1) snack PER night of your stay. Table service credits can be doubled up. The signature dining locations are 2 credits per person.

It's a 2 Tb service. It's nicer dinning. You wouldn't go dressed as you were in the park. Or at least we wouldn't. They ask you to dress business casual.
They are very nice and very good resturants.

I'm sure they're nice but if you're not on the DDP then they're really expensive. We've never done one b/c they're so expensive but b/c DH and I don't want to dress up if we're on vacation.

Not sure what the dining plan is unless you mean the one you get with the annual passes that gives you a small discount?

Would Chefs de France be a signature restaurant?

The Dining Plan (DDP) is a pre-purchased food plan. It is not the discount you get with your Annual Pass (AP) at certain locations. It is also seperate from, but can be used in addition to the Disney Dining Experience (DDE). Allears describes both the DDP and DDE very well

Les Chefs de France is not a Signature. This chart may help you with what a restaurant is classified as.
