One Brunch. One Dinner. Can do the First Night Palo dinner as well, that one doesn’t count on their ‘due to popularity’ rule.
 
Before the cruise, each passenger 18 and older can be booked in 1 of each type of experience at Palo (and at Remy or Enchante on the newer ships). As mentioned above, the first night at Palo is considered a different type that other dinners, so you can book 2 dinners if one is on the first night of the cruise.

Once you are onboard, you can inquire whether there is available space on additional nights. You can go to the area for dining changes on embarkation day, or stop by the Palo check-in desk later in the cruise.
 

Does brunch cost the same as dinner?
The cost for "as much as you want to eat" brunch is the same as the cost of the "prix fixe" dinner menu, from which diners can choose 1 of 2 appetizers, 1 of 2 salads, 1 of 4 entrees, and 1 of 2 desserts.

It is also possible to order individual items from the dinner menu and pay separately for each item. The full menu has options that aren't included in the prix fixe choices.

Someone using their Platinum Castaway Club benefit will get an amount up to the prix fixe cost deducted from their dinner, as long as they have spent at least that amount (not including alcohol and gratuity).

We've been many times for dinner and love that it's free but I've never done brunch. Can you still get the souffle?

This is good to know, as my wife and I are doing an "adults only" cruise on the Fantasy next June to celebrate her birthday, and I would like to avoid the MDR if at all possible, as I know that would be her preference. For somoene who is silver castaway member, how likely is it for them to get multiple dinner reservations at Remy and/or Palo? And I know the best response to this question is "you don't really know until you board the ship".

I am on a 7-night Magic cruise in less than a month. Palo dinner is still available every night, and Palo brunch is still available on 1 of the 2 days it is offered. Remy dinner is expensive, so it tends not to fill up as quickly as Palo.

I have read a couple times that the Palo reservations are for the tables. But you can go to the bar and order food there as well as drink. Might be an option? I might check it out on my upcoming cruise and report back.
