So I was able to get a 6pm dinner reservation on our first night of our first cruise. Do you think we will still be able to make second dinner so we may meet our waiter for the other 3 nights?

The most leisurely pace we ever had for Palo dinner clocked in at 2 hours and a few minutes. It's normally a little less than 2 hours. If you feel they are being a little too leisurely, you can let your server know you have some where to be and they will pick it up a bit.

If you really want to meet your dining team just suggesting that you may consider stopping in the MDR at least an hour after your seating time. If you try and time it for sometime after the main courses are served you might find the wait staff have a little more time to chat. With getting everyone’s drinks, orders and first courses it could be too hectic to just say hi. I know they will accommodate you but things really start to relax for the servers towards dessert, especially at second seating. So enjoy your Palo meal, don’t rush or maybe even have a short stroll or drink after your meal and then drop by the MDR to say hi.

Thank you! We weren't sure if they would let us in after the meal time had started or not

The dining room is always open during mealtimes and access should never be a problem. Just stop at the podium and let them know your situation and table number. If the person at the stand is not your head server, he will introduce you to the head server probably in that same area. If they are not too busy the head server will likely take you to your table to meet the server and asst. server (who really do all the work). I bet they will in-turn try to introduce you to some dessert.
