Update: Happy to share that I got brunch on the Nassau day plus I was also able to book the chocolate and liquor tasting on our day at sea and the champagne tasting on embarking day. 
Trying to decide if I want to (hopefully) book brunch at Palo on our Day at Sea or on our Nassau day.
DH and I have done Nassau and if anything, we might just want to get off the ship in the morning and stroll around for a bit, but no beach and no excursions.
Do you think one day will be easier than the other to book this?
