I would pack lots of layers too. We don't get as cold as the Californians do when the weather is like this, but I do wear jeans and a long sleeved tee shirt. If you have that, another top on top of that and a light jacket you should be fine. For a baby, layers as well, warm socks, a hat and a warm blanket should be fine.
Don't forget to include a change of clothes for both of you in the diaper bag on the plane. I would hope baby sleeps on the plane, but if not, then a few interesting books, quiet toys, cheerios as well as lots of little bits of different snacks, and a blankie and you should do fine on the plane.

I did this trip last summer when we moved down here. What my mom did that was SO fun was give us this big basket of presents right before we left. Each present had something she had written on it. Some of them were for each of us, and some were group things to open together. They would say...open when you get on I-5 headed south! Or...open when you get to Eugene! Or...open when you cross the Oregon/California border! Or open if you see a Purple semi-truck! Inside were fun little things...sometimes they were snacks, the one that was timed to be about dinner time had a McDonalds Arch card in it, sometimes it was crayons or a puzzle, and a couple of times it was a new book on cd or some new music. We were always excited to see what was in the present, and the kids had a good time being on the look out for the different landmarks so they could open another present. It also helped to keep things spread out, so that they didn't open everything in the first 10 minutes.
I think you best strategy is to keep the 5 year old happy and non-whiny and he will keep the baby busy and entertained. If he is having fun and helping to watch for landmarks to help baby open a present, then the baby will think everything is hunky dory also.
