My husband just called Disney and I don't think the CM was right.

We want to buy Aps for a trip in May (offsite) then book a package with dining in September and she said we would also have to buy a one day park admisson for each person in the party in order to book a package deal. Is this right?

I do believe that the CM is correct.
 
Yes the cm was correct.....

you need to buy a "package" to get the DDP......having AP's does not
count.....a package.....includes tickets.

they usually have free dining in sept....if they do...buying the 1 day
ticket will be worth it....
Since you have an AP....you might want to look into the DDE card
which gives you 20% off of food and drinks...

the new 2008 DDP is not the deal that it used to be.
