Here's one. I've never made this recipe. It's from the Philadelphia Cream Cheese Cheesecake Recipe Book which is full of brand names for everything so I've omitted those otherwise, word for word.
Peppermint Cheesecake
1 Cup Chocolate Wafer Crumbs
3 Tablespoons Margarine Melted
Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake at 350, 10 minutes. Cool.
1 envelope unflavored gelatin
1/4 cup cold water
2 8-ounce containers soft Cream Cheese
1/2 cup sugar
1/2 cup milk
1/2 cup crushed peppermint candy
1 cup whipping cream whipped
2 1.65 ounce milk chocolate candy bars, finely chopped
Soften gelatin in water; sitr over low heat until dissolved.
Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Gradually add gelatin, milk and peppermint candy, mixing until blended. Chill until slightly thickened. Fold in whipped cream and chocolate; pour over crust. Chill until firm. Garnish with additional whipped cream combined with crushed peppermint candy, if desired.
10 to 12 servings
Preparation time: 25 minutes plus chilling
