Ever have an Italian Spinach Pie?
Filling (well mine anyway)
1 lB frozen spinich defrosted and drained
onions (however much onion, chopped, you like, I use 1 whole)
minced garlic (I use a teaspoon)
sliced mushrooms (I use 1/2 cup)
cook the heck out of this mixture in olive oil (use liberally), until the spinach is no longer real green but sort of green, basically like mush
Roll out the dough (about 2/3 C of dough for each pie)
Stuff with spinach mixture
Add mozzarella cheese and pepperoni if desired
Bake in oven at 350 until golden brown
This is my own recipe, sorry for the lack of exactness. It may be an acquired taste for these things, but if you acquire that taste, these things are awesome.
If you have a lot of dough, these freeze nicely. And if you have leftover filling, it freezes for the next time you want the pies.
