Hi all! I am making "buckeyes" (you know those chocolate covered peanut butter cookie/candies that look like buckeyes) for a coworker's birthday Thursday. If I make them tonight, the'll still be fresh by the time I give them to her on Thrusday if I keep them in the fridge, right? I'm so busy tomorrow night making other things for her birthday...

This is way OT, sorry!!

we freeze them a few months before christmas. (don't ask, dh's family is addicted to them). My MiL makes cookie trays at Christmas time and I think she makes them up (buckeyes) about a week in advance, stores in the fridge in an airtight container. I haven't pulled out the recipe in a while but I don't think there is anything in them that spoils. I know PB can get stale after so many months on a shelf but I would think in the fridge, airtight container, you should be alright for at least a week, probably more.

GREAT!!! Thank you!!

I'd love to get the recipe for these! My FIL is a pb and chocolate fanatic!

I saw some at Cracker Barrel in the candy section for those of you that don't want to make them LOL. It's just chocolate and PB and some sugars....so I don't think they even need refrigeration as long as you're going to eat them pretty soon? The reason I mention this is because sometimes when you freeze or refrigerate chocolate it gets ugly....or sweats when you take it out of the cold. So maybe just putting them in an airtight container till the party would be sufficient?

I make these at Christmas and keep them in the fridge for several weeks. Keep them in a sealed container and you will be OK.
