Downtown Disney will be open on Thanksgiving Day. Anything in a tourist district, such as International Drive and parts of 192, will most likely be open. If you are staying on Disney property, I would go to Downtown Disney if you are not planning on visiting a park that day. Treasure Planet opens in theatres the day before Thanksgiving. You can always catch a movie at the Pleasure Island AMC if you like.
