Organic Recipes??

We try to maintain a somewhat organic diet, but all my recipes are the same only using organic products:confused3
 
what about trading our for example morningstar groundbeef? I saw this in the store, and maybe more vegetarian meals?

The moosewood cookbooks are a great resource to look into. One of my favorites from the "cooks at home" that are sweet potato wraps. Shred some peeled sweet potato and cook it til it's tender with sliced onion or scallions, little bit of olive oil, cumin, salt, sprinkle of cinnamon and a small handful of raisins. If you are overrun with zucchini shredding some of that or summer squash is good, too, but I wouldn't do it just zuccani (:lmao: ) because the sweet potatoes really make it delish.

Wrap in a tortilla so both ends are tucked in and bake in a foil covered pan at 350ish for 25-30 minutes or so. Serve with sour cream or plain yogurt, salsa and avocado slices. Black beans and rice on the side are yummy, maybe corn on the cob or mexi-corn.

I made some delicious black bean soup tonight (organic & vegetarian).

First, I soaked overnight then cooked one bag of dried black beans.

Then, took:
one onion, chopped
about 10 mini carrots, chopped
4 cloves garlic, sent through the garlic press
and sauteed in some olive oil

Next, added:
chili powder & cumin (not sure how much -- maybe 2-3 tsp of each?)
a box of Trader Joe's vegetable broth (I want to say it's about 30 oz.)
a can of tomato sauce
the cooked black beans

Simmered on the stove for awhile, 'til it tasted good, then smushed up some of the beans with a potato masher for texture. It was delish. We had it with quesadillas (which were on the best cilantro-jalapeno tortillas that I have EVER had!).

I think next time I will try it in the crock pot so I can let it simmer all day. I love the mixture of flavors.

Just noticed, I realized I didn't put "organic" before all the ingredients. Everything was organic, except the spices. I just automatically buy organic whenever possible now.
