OOP Kid's Menu Question

Perhaps this is a dumb question, I don't know, but I am wondering if when paying out of pocket an adult is allowed to order off of the kid's menu?

For example, if we had 2 adults and one 6 year old child then ordered 3 items off of the kid's menu...would they accept that? Or would we be told we cannot order more kids meals than we have children, and that we have to pay "adult prices" from the "adult menu"?

At most places you will be fine, as long as you are not having a family style or all you can eat buffet meal. I've ordered kids meals many times, and have had no problems at all.

At CS definitely fine. (After all how do they know how many kids are in the party?)
At buffets/family services, you definitely be billed for 2 adults
At standard Table Service, you'll be mostly okay. The Plaza and some of the non-Disney owned restaurants are strict on the age limits. But please consider tipping based off adult entrees rather than ticket prices to be fair to the server waiting on you.

Finally, I'd guess that for most people just the kids meals would get boring after a few days (not a lot of variety among restaurants) and likely not be enough food with all the walking (absent a lot of snacks or apps and/or deserts as well).

Another thing to consider would be splitting an adult meal or ordering just apps and deserts. Definitely wouldn't have any issues with the apps and deserts option.
