ONE WEEK ! Need help!

Next Week we will be at MGM at this time. I can't wait for our Disney Adventure to begin! I would love any recommendations from you all! Here is my plan of attack:
Tuesday: MGM (Early Entry) AM Magic Kingdom PM (Spectromagic)
Wednesday Animal Kingdom AM EPCOT (PM) Illuminations
Thursday EPCOT AM Princess Breakfast MGM PM (Fantasmic)
Friday Magic Kingdom AM (Early Entry) Magic Kingdom PM

We go back in the afternoon to rest, swim. We will have a an almost two year old (third Disney trip) my husband, my parents and my best friend (her last Disney trip was when EPCOT just opened.) We are staying at POR. We will be there actually to Monday and Plan to relax Saturday-Monday with no park visits, just pool time and DTD. We are visiting OHanas for the first time on Sunday night, and are trying to decide between Cape May Cafe and Whispering Canyon for Saturday Night! (I have PS for all).

I want to make sure my friend gets to see the highlights, I know we can't fit it all in to four park days.

My suggestion would be to skip a day mid-week, instead of having 3 non-park days at the end...that would make me sad to know I was finished with the parks but still so close to the fun Others will have to help with your park hopping ideas, we don't park hop. But your hopping schedule looks good to me Are you planning to stay for any of the evening EMH's?
