One Day or Two?

My husband and I are planning a Disney trip for our anniversary. We are thinking about adding some time at Universal. We are trying to decide if we should do two days at Universal or one day and do the private vip tour. We want to see both parks and are mainly interested in riding and maybe catching a show or two. If we do two days we will lose one day at Disney (we only have three.). What do you think, one day or two?

Note: We have already budgeted for the price of the private VIP tour so the cost of the tour will not be that much of a factor in how many days we spend at Universal.

So you have a total of 3 days for theme parks? So if you do 2 Universal, you only have 1 Disney? I think it's a no-brainer. Go to Disney for 2 days and do your VIP tour on your 1 Universal day if you already have that cost budgeted.

If I misunderstood and you have 3 Disney days and 1 Universal day, the answer would depend on the time of year you choose. If it's a lower crowd timeframe, you may still be able to fully enjoy both Universal parks in 1 day - especially with a VIP tour.
 
Sorry I should have been a little clearer. We were thinking three days at Disney and one day at Universal. Our trip would be some time in mid-September 2016.

Then one day with park-to-park tickets so you can ride the Hogwarts Express between both parks.
 
Assuming crowds are "lower" at Universal in Sept like they are at Disney I think you could see most of the bigger attractions in each park with park-to-park admission (park hopper), would need to arrive early and stay late in order to accomplish. We stayed 6.5-7 hours a day at each park and were able to cover most of it. One park a day is best for a more leisurely pace.
 
I am not up on the VIP tour and what it allows, but what about taking that money and using it for a night at a deluxe universal resort, this way you get the unlimited express pass for 2 days and get a park to park ticket or just a base 1 park per day ticket. This way no traveling back and for twice and get more park time.
