One day in Orlando.....What to do

My mom just told me she has a work conference in mid october at a luxury resort in Orlando and my son and I can go and stay at the hotel while she at the conference. She gets a one day break from work and wanted to do a theme park that day. But when you have so many options.....which one?

Me: I have done Disney, all parks, at least a dozen times. Never gets old, love love love it. I have done universal studios but about 15 years ago and islands of adventure wasn't around then. I do NOT like most roller coasters. Flips and inverts are fine-drops NO WAY so hulk and dueling dragons are out but I do like RnR coaster. I have done sea world but not in about 15 years as well. Never done lego land and can't afford discovery cove.

My son: 10 years old. Been to WDW twice (ages 6 and 8) and done all parks. Never been to universal or ioa. Will pretty much ride anything. Loved Legos as of last year but is getting a bit "too cool" for kiddie stuff so many lego land is too young for him? Opinions on that welcomed. Never been to sea world.

My mom: mid 50s doesn't do roller coasters. Has done Disney once, never universal or IOA. Sea world was 20 years ago and will follow grandson wherever he wants.

So do we stick with what we know and love and do MK or Hollywood studios for a day? Or do we try universal studios? Or park hop universal studios and islands of adventure?

Any opinions are greatly appreciated.
