I would like to know what things aren't available at WDW

If you can afford park hoppers, CarsLand/Radiator Springs Racers are among the best things modern Disney have ever created in the U.S parks in terms of a themed land. It is absolutely magical at night. You can skip all of Galaxy's Edge if you have been to the WDW version.
