One adult, multiple kids, tips?

Not sure about this, but due to bad storms in our area we are without water and my daughter now has two weeks off instead of just next week. We're heading to Vegas to see family (and have access to running water), and I am bringing my Disney bag with APs just in case I feel like stopping at Disneyland on our drive home. It's roughly 4 hours to Disneyland with good traffic from Vegas (if I leave early enough), so definitely a possibility as it only adds about an hour to our total drive home.

Anyway, it would be just me with the three kids. Bonus, the oldest is 7 pushing 8, so she can ride by herself. But the other two are not. I'm thinking this would have to be a pretty low key day with us only riding rides the 2 y/o is big enough for (38"). The issue comes with seating. What we've experienced and what I read are sometimes contradictory. The last time we were at Disneyland as a family they let all 3 little ones sit in front of DH and I on the double row Fantasyland rides. I'm thinking that they would probably allow my son to sit with his older sister then since they did last time. Any tips or thoughts on what they will or won't let us ride together. What about Gadget's? All the kids like that one, but I'm thinking they may not let my two older ones sit together. But I know on Space they did let my daughter sit in front of my husband when she was still six and he sat with my son.
 
We've mostly been with 2 adults and 3 kids, but here are my thoughts- Prep your older daughter to ride solo a bunch, so you can sit with the two little ones and then she gets a bench to herself. I think it depends on the ride- we've done all the fast pass rides with one adult, one 7 and one 5, but that is different. I don't know how strict they are in FL but anything where aren't directly behind the kids I'd expect that the 7 year old goes solo- i.e. Mr toad.
 
Most of the time, it is fine if you are in the same vehicle. So, Alice would be fine with the two older kids in the same car in front of you and the youngest, but Buzz Lightyear would be you with the two youngest and the oldest alone. Toy Story would be handled the same way as Buzz, since you can't see/help the kids, even if they are in your same car. I think Gadget's would be out.
