Once a month cooking, does anyone do this?

I used to go to a message board that would have a once a month cooking thread, but that site is no longer around. I am wondering does anyone do this here and can I get recipe ideas from you all. I did make 6 large bowls of chicken noodle soup today that I froze and stew meat in the crock pot for supper either tommorrow night or Wednesday night.

My DH works second shift every other week, I work full time and then some day shift and we have two kids that for the most part we are taking one place or the other 3-4 nights a week. I want meals that I can quickly heat and eat, but are still healthy.

What ideas can you throw my way?

I like to buy a big thing of hamburger and cook it all at once so I feel like I am saving money. I make tamale pie, lasanga, enchiladas and freeze them. I also then make my spaghetti for that night with some hamburger as well. I also love to freeze quiche, and chicken enchiladas. I also tried to freeze my homemade chicken pot pies but they don't taste as good as fresh so I stopped on those. I love to freeze food for those nights I just DO NOT want to cook or can't find anything to cook.
