Awwww man, I have decided the podcast team is evil !!!!!

Where I used to work we had a vendor that would send us pralines from a place I think was called the New Orleans Candy Company (or maybe it was Praline Company?) and they were so good...today's podcast brought back some very yummy memories.

The pecans are a little bit chewy, but the creamy consistancy of the "goop" that holds it together almost melts in your mouth. They really are good...extremely sweet, but good.

Is it chewy or more like a peanut brittle ?

I made a batch this week and they are yummy. They are easy to make... you just have to make them on a dry day (read not humid)

1 stick of butter
2 cups granulated sugar
1 cup brown sugar
1 cup milk
2 tbsp Karo syrup
4 cups pecans

cook until the soft ball stage. (Add the pecans after everything else boils for about 20 minutes.) put newpaper under waxed paper and spoon onto the paper until it sets. This is not for kids to cook and I usually make mine after mine have gone to bed.
Also, instead of pecans you can use coconut, any other nut, or nothing.

If it doesnt set, 2 things happened. One, too humid (you have to watch the weather) or 2, not cooked long enough. Enjoy.... they are great for Christmas presents....
