Have you given buckwheat pillows a try? I know it sounds unusual, but I have a wool/buckwheat combo pillow and adore it. Fluffy-firm describes it to a T. I can adjust it by adding more buckwheat or removing some. To wash, just empty the case and wash like a pillowcase. You can change the buckwheat if you want to freshen it up, we've had it a while and haven't seen the need. There are hypoallergenic varieties that may be beads rather than buckwheat, too, but I found them noisier and shiftier than buckwheat.
Buckwheat pillows are definitely different, for one thing ours are much smaller than customary pillows, but then your head stays put more on it, so I'd try it before committing to it, but if you like it, you can make your own using the chafe/bead/grain and fiber (such as kapok, wool, or cotton) that you prefer, for very little.
