OK gang, I just booked the DDP, a few simple ??'s now..

I know I was very skeptical in the past about the DDP but after giving it a lot of thought, I took the plunge. I realize its a money saver but its not if you are not a big eater (like myself). I do, however, look forward to a sit down meal in the evenings while at the world so at least I know I'm covered there. I know my hubby will get his money's worth at least. This trip is just the 2 of us so I will have an easier time paying close attention to the entire system.

What do you do with leftover credits...anything? We are not arriving until late our first night and we are leaving via an airplane our last day @7am. We will surely have some credits left.

If you order alcohol, is that put on a separate check? (I love wine w/dinner).

I'm sure I will think of more questions as this is all new to me so please bear w/me. thank you

For the extra credits, if you are staying, say, 5 nights, you'll have 5 cs and 5 ts for your 6 days. But since your first and last days are very short, you'll have to use those credits in 4 full days.
That should be easy if you simply both eat 1 cs breakfast one day and 1 ts breakfast another day. Then you eat your usual 1 cs lunch and 1 ts dinner for the whole 4 days.

For snacks, I've read a lot about DTD Goofy's Candy Co. and they amazing snacks you get there for your credits. If you have any left on your last evening, head over there and spend them for snacks to take home.

I'm not sure how the alcohol is receipted, but I do know they add 18% gratuity automatically, since you are on the DDP. Even your non-DDP purchases get the added gratuity.
 
We wound up with one CS leftover, and a ton of snack credits! We purchased cute themed snacks (from Goofy's in DTD and the resort gift shop) to bring back home as gifts for the girls friends with our "leftovers".
 
The dining credits can be used in a variety of ways. Take the table service credits. If you arrive too late the first evening to use the table service credit you could do a Signature place (requiring two credits each) sometime during your stay or you could use that credit for a table service lunch.

You have 1 counter meal, 1 snack and 1 table service meal for each person per night you are at WDW.

If you arrive at 9 pm on a Monday evening and leave at 6 am on Friday that would give you a total of 8 counter service meals, 8 table service meals and 8 snacks. You could eat all counter service one day if you choose. It is what ever you decide.

I would suggest that you look at the menus for the dining places and prepare to make your ADR's 180 days before your arrival.
