Re the amoebas, it's called amoebic meningoencephalitis, and several people have died of it in Florida since the summer of 2007, most of them in the Orlando area. I thought lake swimming was REALLY discouraged at Disney because the amoebas thrive in warm, non-chlorinated water. Apparently they work their way into the brain from the nasal cavity, causing irreversible swelling and death. It was still all over the media when we visited WDW in 2008, so when my 2-yr-old fell in the lake water at the Poly, I had a total panic attack. Almost certainly an overreaction, since the water's pretty cold in January, and it's a rare infection in any case. Still, better safe than sorry -- I would never let my kids swim in a Florida lake. The most recent cases I know of were a 10-year-old boy and 22-year-old man last October, one in Polk County and one in Orlando. Heartbreaking.
