Offsite at Christmas

If I stay offsite the week between Christmas and New Years, will I have trouble getting into the parks?
 
You might. Plan to arrive at least 30 minutes ahead of the published park opening, especially if you are planning to go to the MK. Also, I wouldn't plan on doing any hopping between parks during that time without first checking to see if the "hop to park" is still open to off site guests. Believe you can do that at the park's guest services or tip board.
 
You absolutely will, depending on the park and the day and the traffic for that park. Magic Kingdom closes the most frequently. I know that it is a lot more money to stay on property, but the guaranteed admission is worth it, plus the Disney resorts are fabulous at Christmas!
 
I have stayed off site when visiting over Christmas - New Years, since the resorts are at their highest room rates. Once I checked out of a resort in favor of off site accommodations on the day the rates went up (Dec. 21 that year).

Resort guests have "more priority" in getting into a crowded park I think only because the parking lots for day guests fill up before the park reaches capacity. But resort guests are not guaranteed admission to their first choice park on crowded days.
