Officially chosen what dates we will move to

We are currently booked for May 31-June 6 of this year. Because we are coming from Australia and we aren't allowed to travel internationally, we have locked in April 13-19 next year. It's a really long time away but the only time we could make work because we have had a number of friends move weddings to next year when they were cancelled this year.

What is the process of moving to those dates as they're not available on the Disney World website yet to book?

You will need to call WDW to secure those dates. Do you have a package booked or do you plan on booking a package for the April 2021 dates? If so, ask the WDW phone CM to book a "basic package" for you. It's essentially a room-only booking but with package terms and conditions. By booking a basic package, it allows you to easily add tickets and/or dining for the 2021 dates once those components are released for next year - that usually happens in early to mid-summer. If you are just booking room-only, you can book as a room-only as well.

Packages (room plus tickets and/or dining) have not been released, yet, for 2021, but you can book a room at this time. When you call to modify, tell the CM you would like to book a "basic package" for the April dates. This is essentially a room-only, but with package terms and conditions ($200 deposit, balance due 30 days prior to check-in). The advantage of doing this is, once packages are officially released for 2021, you can call back in and very easily add the tickets to the package. What you do not want them to do is book room-only. Make sure it's a "basic package".
