There are dozens of properties that offer a free breakfast; many others add one via a promotion (sometimes for a little extra $$$). The quality of the breakfast varies, however...
Fairfield Inn on Canada Avenue if you're going to Universal. Fairfield Inn at the Marriott Village at Lake Buena Vista if you're going to WDW. Both have continental breakfasts with the facilities to make you're own waffles. Both are great value to stay at too.
We stayed at the Residence Inn Lake Buena Vista in early November and they offer a free breakfast buffett. It was pretty large (several hot items including make your own waffles and oatmeal with toppings!) and adequate for our needs.

Hampton Inn is the place for us!
REALLY REALLY NICE breakfast, with waffles that you can make on you own, eggs, oatmeal, lost of fruits, yogourt, lost of drinks choice.
And the best thing is that you can bring a goodie bag for the road
With children having a banana is a blessing!!!
I've not stayed there yet...will be in January...but several guidebooks recommend the comfort suites kissimmee, and the rate was actually quite good too.
Speaking from personal experience, you can't go wrong with any Hampton Inn. We always stay at them every summer when we drive to WDW along Interstate 75 & their morning breakfasts are amaizing.
The Howard Johnson on International Drive is offering free great breakfast, you have some cereals, donuts, banana, orange, breads and you can make your own waffle, it's yummy and filing
