How practical would it be to spend half the day in the park and then leave to get lunch off site? We will be staying at one of the Universal hotels. Is it a big pain to get in and out of the resort area?

Its not a pain but will eat up some of your time. When we were there, parks were only open until 6 so the furthest we went was City Walk which has a ton of options - cheap and more expensive, quick service or full service. I was pleasantly surprised with the number of good food options both in the parks and at city walk.
